Some fights require you to re-enter a zone until they appear. Other’s have more unique requirements you have to do first to make the monster appear. Some of the timestamps I’ve included demonstrate what you have to do to make them appear like Ekskalibur. But other’s like Hairy Potter and Otter Nobunaga isn’t shown.
