ORANGE CARDAMOM MADELEINE
Make 24
1/4 cup sugar
2 eggs
1/4 cup butter, cubed
1 Tablespoon honey
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
3/4 teaspoon ground cardamom
1 teaspoon baking powder
1/4 teaspoon salt
ORANGE ZEST GLAZE
3/4 cups powdered sugar
1/2 teaspoon orange zest
2 teaspoons orange juice
1. Melt butter in small sauce pan over low-heat. Remove from heat. Add honey and vanilla. Stir. Cool 10 minutes.
2. Whisk together flour, baking powder, salt, and cardamom. Set aside.
3. Whisk together eggs and sugar. Fold in flour mixture until well blended. Stir in butter mixture. Cover and refrigerate for 30 minutes.
4. Butter Madeleine pan. Fill 1/2 full of chilled batter.
5. Bake in preheated 325 degree F. oven for 30 minutes or until golden around edges.
6. Cool in pan for 3-5 minutes. Gently remove from shells and transfer to cooling rack.
7. whisk together powdered sugar, orange zest, and orange juice until smooth.
7. Brush tops of each Madeleine with orange glaze.
TIPS: Store in airtight container up to 3 days or freeze up to 3 months.
