The ingredients to make vanilla madeleines
Enough amount for 16 madeleines.
• Granulated sugar: 2.6 oz 75 g (3/8 US cup)
• Salt: 1/8 tsp
• Vanilla beans: 1/2 pod (or vanilla extract: 1/2 tsp)
• Lemon zest: 1/2 medium lemon
• Whole eggs: 3.7 oz 105 g (about 2 eggs)
• Honey: 1 oz 30 g (1.5 Tbsp)
• Milk: 0.5 oz 15 g (1 Tbsp)
• Oil: 0.5 oz 15 g (1 Tbsp)
• Cake flour: 3.5 oz 100 g (3/4 US cup 1 Tbsp) * Use all-purpose flour if you can’t get cake flour. The texture gets fluffier with cake flour.
• Baking Powder: 0.12 oz 3.5 g (3/4 tsp)
• Unsalted butter (melted): 3 oz 85 g (6 Tbsp)
• Butter(soft) for a pan: Some
• All-purpose flour for a pan: Some
Preheat oven at 395 F 201 C. Bake at 365 F 185 C for 9 – 10 minutes.
