You need to recruit Volo into your camp and DO NOT have him solve your parasite problem (operate on you eye), because he departs your camp after that. Use Astarian to pickpocket him. If you target the non-money items, you can clear out his big inventory quickly. Try to steal his Gold. If he catches you he walks away for less than an minute and you can pickpocket him again. He does not fight or trigger a cut scene. Keep doing this until you have everything. Distribute your loot to your companions and the chest while he strolls back. When Volo is out of inventory do a /”Camp without supplies/” partial long rest. That will reset his entire invetory.
