A combination of rice, lentils, fresh vegetables, and goat cheese – sounds good? It can be a light and healthy lunch, a simple snack, or an easy weeknight dinner.

Serves: 1
Preparation time: 15 min
Cooking time: 15 min

INGREDIENTS:
200 g of semi-whole rice
120 g of coral lentils
1 small onion
1 tomato
1 small cucumber
3 radishes
110 g of Ile de France goat cheese
Salt and mixed pepper
4 tbsp of black sesame seeds
3 tbsp sesame oil
½ lemon

PREPARATION:
1. Put rice in boiling water and add a pinch of salt.
2. In another pot with the boiling water, add coral lentils and a pinch of salt.
3. Cut all the vegetables
4. Crush the goat cheese and season it with salt and mixed pepper.
5. Make little cheese balls and roll them into sesame seeds.
6. When the rice is cooked, place it into a bowl.
7. On top of it, add cooked coral lentils, slices of radishes, cucumber, tomato, onion, and cheese balls.
