Cook without an oven: You will need a large pan with a lid, a steel stand/steel trivet (handi stand) and a steel plate.
Place a large pan on medium-low flame, put the steel stand/steel trivet (handi stand) in the pan (to prevent cookies from direct heat), grease a steel plate with oil or butter and place cookies on the steel plate. Finally, place the plate on the steel stand/trivet. Cover with a lid to trap the heat like an oven. Cook until golden.
*For a vegetarian version, substitute egg with 1/2 tsp baking powder and 4 tbsp(1/4cup) of milk.
Storing:
Baked Cookies: Store them in an airtight container for up to 3 days.
Cookie Dough: Freeze the dough for up to 2 months, thaw dough and bake cookies when needed.

Ingredients:
Butter (Makhan) – 1/2 cup (softened to room temperature)
Brown sugar – 1/2 cup
Egg (Anda) – 1 (room temperature)
Vanilla extract – 1 tsp
All-purpose flour (Maida) – 1 1/4 cup
Corn flour (Makai ka aata)- 1 tbsp
Baking soda (Meetha soda) – 1/2 tsp
Salt (Namak) – 1/2 tsp
Dark chocolate chips – 1/2 cup
Semi-sweet chocolate chips – 1/2 cup
Directions:
– In a bowl, add the following ingredients:
Butter (Makhan) – 1/2 cup (soften to room temperature)
Brown sugar – 1/2 cup
Egg (Anda) – 1 (room temperature)
Vanilla extract – 1 tsp
– Blend the ingredients well and add the following:
All purpose flour – 1 and 1/4 cup
All-purpose flour (Maida) – 1 1/4 cup
Corn flour (Makai ka aata)- 1 tbsp
* corn flour is added to make the cookies soft and tender
Baking soda (Meetha soda) – 1/2 tsp
Salt (Namak) – 1/2 tsp
– Mix well
– Add the chocolate chips
Dark chocolate chips – 1/2 cup
Semi-sweet chocolate chips – 1/2 cup
* Both are added for balanced sweetness, you can add based on preference.
– Mix well and fold chocolate chips in the dough
– Refrigerate mixture for 1 hour
* Chilling the dough makes more tender and well-shaped cookies
– Line baking tray with parchment paper or grease baking tray
– Prepare small balls – place in baking tray at least 2 inches away from each other
– Add extra chocolate chips on top – for great presentation
– Preheat oven at 325 degrees – 325ºF (162 C)
– Bake for 12 to 15 mins until golden and brown around the edges.
– When baked let sit for 5 mins to cool
* Resting cookies gives a crunchy texture
– Serve with milk and enjoy
– Freeze the cookie dough, thaw for half an hour before baking and follow the baking instructions above.
